Soaking mixes

Improving the shelf life of fresh fish or combining improved shelf life with reduced thaw and drip losses for deep frozen fish can be best done by soaking due to the delicate nature of fish meat. Important is tight control of mix concentration and soaking time to prevent problems with either too much treatment or too little.
Cures to improve shelf life of both fresh and deep frozen fish are available based on:

    • Ascorbic acid, E300 (Vitamin C)
    • Sodium ascorbate
    • Citric acid
    • Citrates, mainly trisodium citrate but tripotassium citrate based cures are available to reduce sodium content in the treated fish.

Cures that are only going to be used for deep frozen fish can be further improved by using:

    • Polyphosphates to improve texture and yield of the fillets or minced fish. Additional benefit is the reduction in drip and thaw losses.

Injection mixes

Certain fish and fish fillets can be injected to improve taste, flavour and shelf life by using functional additives. Lindenburg has various products in our catalogue to be able to develop a suitable answer to your production development question or to solve processing that you have. Mixes to obtain a clean label or to reduce the sodium content in the treated fish are some of the examples. Tumbling mixes

Firm fish species can be treated by means of tumbing in a tumbler for a short period of time with a functional additive mix. Next to soaking and injection mixes Lindenburg offers tumbling mixes that ensure quick uptake in the fish to minimise tumbling time and maximize quality of the treated product. Fish has a delicate structure so even firm fishes need to be tumbled with care for a short period of time. Tumbling mixes will always be tested together with customers to ensure a properly functioning tumbling process.
